Mexican Street Corn Pasta



Pasta Salad Ingredients

2 1/2 cups dry macaroni, cook them and chill the

noodles

10 oz bag of frozen corn

1 tablespoon tajin

1/2 cup Cotija cheese (Parmesan works fine too)

1/2 cup red onions, diced

2 jalapeños chopped

1/2 cup chopped cilantro

2 garlic cloves, minced

1 tsp chili powder

1/4 tsp salt

1/4 tsp pepper

1/4 tsp garlic powder

1/8 tsp cayenne pepper


Dressing Ingredients

1 cup Mayo

1/2 cup sour cream

1/4 cup lime juice

2 tsp lime zest

1/4 tsp salt

1/4 tsp pepper


Cooking Directions

  1. Cook corn according to directions or I roasted mine in a pan with garlic powder and tajin for 6-8 minutes on medium heat

  2. Cook your pasta until Al dente. Drain water and let cool while making dressing.

  3. Mix dressing well and set aside.

  4. In a bowl add your pasta, onion, jalapeño, garlic, and seasonings, mix together

  5. Add your dressing and cheese  to the pasta mixture.

  6. Let it cool in the fridge for 30 mins. Then serve
